The wine is made at LaRocca Vineyards and transferred to Ployez
Winery in Lake County, where Philip LaRocca and Didier Jacquet
along with Ployez winery delicately produce this one of a kind Organic
Sparkling wine. NOTES: This brut, blanc de blancs offers natural effervescent with
a light citric and green apple experience. This wine is comparable

Merlot is blended with 9% high mountain Cabernet Sauvignon and aged on a toasted French oak. NOTES: smooth and supple with a heart of royal-anne cherry and ripe raspberry flavors wrapped with light, yet round tannins. Earth notes with a slight chocolate finish. Well balanced and elegant. Located on the west side of the Sutter Buttes, the smallest mountain range in the world, our organic Chenin Blanc flourishes with sandy loam soil, warmer days and yet the cool nights of the Buttes. WINEMAKING: Estate bottled with no synthetic chemicals, no sulfites. Cold fermented in stainless steel, this wine has been through malolactic fermentation fined with bentonite (a natural clay), and heat and cold stabilized. Notes: Wonderful floral aromas with a jazzy mouthful of ripe green melon, mingling with vibrant spiced apple, and honey on a lean elegant framework; with a perfectly balanced crisp acidity on the finish. Lassen. Small, rich clusters are produced in the clay loam soil with warm summer days and cool mountain nights. Blend of irrigated with our non-irrigated section of the vineyard enhances the variety. Our Cabernet vineyard is over 40 years old. WINEMAKING: Small, old growth clusters make this wine our signature wine. Aged on toasted French and sometimes American Oak, enhances the structure and flavors of our cabernet. NOTES: Big and bold, with deep rich color. Hints of blackberry, fig and bing cherry, with a touch of smoke or tobacco on the finish, and yet never losing its an elegant framework of cabernet berries. This wine is dry, smooth, and soft.

Dry farmed WINEMAKING: This elegant late harvest dessert wine, is harvested at the peak of ripeness, just before Thanksgiving (a good 2 months after our Zinfandel table wine) at 34.5 brix. Winemaker, Philip LaRocca waits for the rain that sets the Botrytis Cinerea, the noble rot, which creates the most well balanced late harvest. This wine is ferments for up to 60 days. NOTES: This dessert-style red wine is seductive from start to finish. Capturing the desirable effects of the Botrytis Cinerea, this wine is rich, ripe and elegant.
